#79 shows the logo on a stainless steel, backlit cutout and # 80 shows it on a red coffee sleeve.
The most important thing I see about your logo is the fact that you're going to be cutting it out of metal. If you imagine cutting an "O" from metal, the center (the doughnut hole) would be a separate piece that would have to be attached separately. Ever separate piece like this would increase cost and more importantly, weaken the integrity of the sign. Within a few years, these pieces would be falling off due to weather and possible vandalism.
My design has NONE of these areas. Of course any logo could be adjusted to accomplish this but my preference is to create a logo that doesn't need to be altered for any application. It's the same logo everywhere it's used and it's designed with these considerations from the start rather than adjusting later.
The logo itself uses a careful play of negative space between the letters of "Asylum" and it combines the type styles of the Old English (appearing a lot in the reference styles you've chosen) and a very slick, clean futuristic font for "coffee house". From what I can tell, this is the same contrast that will be found in your decor, mixing industrial/sterile with organic and old.
