Very small but interesting modifications! I like this text style, I really recommend the combination of clean and strong text with the elegance and detail of the serif.
More changes. I think I will stop here, unless you tell me to try something different! I added a slight detail on the left leg of N and it really creates a focus point, catching your attention. I also reviewed the proportion ratio between the symbol and the text. Oh, almost forgot, the text in "VERITAS" is Bodoni, an Italian typeface!

Hello, please see some revisions I worked. Trying to figure out what changed your mind. I changed the "veritas" word back into black, I rearranged the proportions making the symbol smaller and by doing so, it looks more tight and compact. In order not to make it too tight, I have put it a bit far to the left. Please tell me if I can do anything else.
Hello, trying different angles to the same approach. Colors are bit more wine pinkish and not so orange/red. Text is also lighter and with a slight gradient from 90% to 100% black.
Decided to take most of the elements in the best ranked entry so far (colors and veritas text) and added some "movement" to the top of the logo, making it look more dynamic.
