Sure I can do that. Here is a version where white has been added to the middle of the ''e'. Still wanted to keep a little black on the edge too (because all the other letters with knock out shapes still have a black stroke on the inside, and i didn't want it to look out of place).
on a side note,
The vibrant red will look great on the web (on computer screens), but these bright colors do not reproduce the same in print (because the screen colors are RGB and printing in the real world is CMYK)
so i suggest you pick a pantone red color (or other if you're not set on red) from this link
