Just talking brand strategy - no offense intended - but the banner / font that you're using has a outdated feel to it. (and not in a modern, vintage sort of way) I've looked through your website (and some other images I found online) and it looks like a great place! I'd just hate to give the "not kept up" feel to it.
We can definitely work without the FSK image, but my strategy for this particular logo was that it presented a newer, family-friendly feel and made the name more personal to the customers, rather than just a name (like a hospital wing, etc.) Having FSK (in historical attire/hairstyle, but presented in a more modern illustrative style), reminds people that he actually was an historical figure, rather than a dead relative.
Another option I was going to suggest would be to have some musical notes (subtle, as he intended his work as a poem, rather than a song) behind him. And have more stars than stripes...as it would just make more sense. Should I continue with that idea? Or do you not want to use his image at all?
Otherwise, I can just start over with the banner?
Again - I hope that wasn't too harsh - I'm certainly not intending it as such. I'd be remiss if I didn't offer my thoughts as a professional designer. :) Please advise me on what course I should take next.
I appreciate your comments. I would not mind seeing musical notes and stars and stripes. Perhaps a bald eagle? Pirate ship like our spray ground? Not sold on FSK. Thanks.
#9 / #10 I used your banner, but updated it a touch - took off the blue stroke and opened up the scroll on the right side to better match the version on the left.
The blue field of the flag has been replaced with blue stars and a firework explosion.
#10 - The music notes actually correspond with the words "Oh, say can you see"
#17 / #18 are the revised. They're the same, except #18 has larger stars. I've also added a slightly offset blue shadow to 1)give the text a more substantial feeling and 2) to reflect the previous blue outline.
#19 / #20 I've added a couple variations with a yellow-gold for variety.
Any other variations that you'd like to see, please let me know :)
