The brand is targeting folks who are used to a high quality dining experience, but don't take themselves too seriously.
We take our services seriously and place a high value on the overall experience of our customers. At the same time, we have a dry sense of humor that can come across as rude if you're not accustomed to it. Those who are accustomed to it, know that it's a form of genuine affection and love for our guests.

Our Ideas & Additional Information
The brand logo is just as important as the brand name. Should be simple (i.e. sans serif font, flat), so as to indicate luxury/fine dining. However, the brand logo should be able to stand alone and recognizable if needed.
Capture the cynical side and affectionate side of the brand. Using negative space would be awesome.
I think elegantly combining the "C" of Costello's into a flame would be spot on.
Another idea would be using the silhouette of a traditional smoker, a cow, or a pig. We specialize in barbecue so things like smoked brisket, ribs, chicken, pork shoulder, etc. are very popular.
