I think a serif font works better. This one you found is a good compromise. I am not totally sold on the image.

It's an alternative to the design I have from the other designer, but I am still not totally convinced. However, is the one of yours that works better, so I kept it.

Prefer sans serif or serif?

If you want to elaborate a bit more, we are still interested. This means the two words have to be centered and not left aligned and we like something that keeps the tone of this one but is more refined.

I like the monocrome (blue) better

I like the syntesys in the logo. Try making the shield smaller.

I decided no "medieval" symbol works, so I disapproved this one.

The look is not bad, but the logotype doesn't work (the C and T are barely recognizable in the shield).

Better the monocromatic version. But I would like you try something different, I don't think the "medieval" metaphor works. In fact I deleted the reference from the brief

Interesting variation on the theme of "protection". It has just a bit a "old style" feeling, but I save it.
