Maury Auster Shellfish
We are a Black and Woman owned boutique, shellfish farm in Vashon island, WA. I am originally from New Orleans, LA and my partner Cassondra is from the Pacific Northwest. Vashon is divided into 2 areas, Vashon Island and Maury Island. We grow our shellfish on Maury island, considered a separate island though connected to Vashon by a little strip of land. Both land masses are generally called Vashon Island as a whole. Our name comes from the Maury of Maury Island and Auster, which is German for oyster, an homage to the 3 years that Cassondra spent in Germany as an exchange student.
Being a small shellfish farm, we are able to really love on and refine our oysters allowing them to grow beautiful striated shells that have deep cups, firm meat, and amazing flavor. Not only do we sell to local restaurants markets and events, we are in the process of creating shore dinners that are centered around our oysters and the love of the Salish Sea.
