I'm keeping about 8 to 10 entries as we go along, with each having some design element that I like. Is there a recommended number of designs to shortlist?

It is up to you. But I would say as many as represent your design needs, Howmay that may be,

But 8-10 will should make it clear to designers of what you want.

Too many different ideas can get you confused very quickly, so cutting it down to ten makes sense. But be sure to encourage even the designers which don't make it into the top 10 - a general comment about where you see it going, why you didn't want a certain thing etc helps us all out and keeps designers from just leaving the contest...
How many designs and revisions you get relates directly to the kind of feedback you give...
