Equal included in the F in the initial concept.

Split the 'F' to have the equal sign included.

What about a plus sign included in the F to suggest a raise? As in better pay, increased amount of money.

Equal sign turned into 'euro' symbol to suggest money/pay/equal pay.

really good but the symbol ist not perfect. The logo/symbol must say: "we want to earn more money" or "Hard Work equal content" or "better payment" when i see it with only the words "wir wollen's fair"

What about scales to express fairness/justice?

we need a other symbol then the hands for fairness

Included a handshake in the 'A'.

The idea with the hat came because of what you do, the business you're in. With the word 'FAIR' being the focal point, i assumed the icon could be about something else but still related to the business.

a logo with a symbol of fairness will be nice or a symbol with wow effect
