Regarding the sign... personally, nope... but I would definitely help if needed throughout the process when your working with a sign company in the event they would need anything adjusted/tweaked... That was a just a suggestion but it will ultimately come down to you, the investors, designers of the restaurant but it sounds like it may fit in well with a lofty, industrial, modern type of environment... I'm sure you could find a company local in Kansas City who could do something pretty unique...

http://www.metallogos.comYea, the multiple formats do help... and its nice to play off the final colors to build a strong brand... lets say you go with a deep blue/warm tones then you could do something nice/unique with the sign... Play off these colors with the decor inside the restaurant - maybe deep blue apparel with a one color warm tone logo for the embroidery... full color logo on the menu's, etc... just mixing it up playing off the final colors...
