Brillant design! I read that the CH wants to incorporate food and drink icons. BIG MISTAKE. I think that is assumed at a place like the House of Blues.

Thanks for the feedback ;)... the deep blue/warm tones was may favorite color scheme as well... I design all my logomarks to work well in one color or styled up so it's should be a breeze to do watermarks, employee apparel, embossing on menu's, etc... I don't know what your budget for the outdoor sign is but I'm sure you could do something pretty slick with this mark and some metal... ;)
Overall, I think it throws a nice subtle nod to good food with the open flame and incorporates a feeling of the atmosphere via the musical notes... Simple, Clean, and Modern... I typically deliver a vector, psd, and transparent image in full color, reverse color, and one color which is why I show a "reverse color"... this is so you have a bit of flexibility in how you choose to brand...
Saint Joseph, yep, born/raised... My wife's father lives down in Belton... We'll have to come down and grab a steak when you guys open... my wife and I love places with good food/good music... then again, who doesn't ;)

Cool. I kind of like the idea of having one standard but using several of the other submissios for appreal etc. Any idea how you would incorporate the metal into the signage. This is a huge part of creating the buzz for the concept.
Regarding the sign... personally, nope... but I would definitely help if needed throughout the process when your working with a sign company in the event they would need anything adjusted/tweaked... That was a just a suggestion but it will ultimately come down to you, the investors, designers of the restaurant but it sounds like it may fit in well with a lofty, industrial, modern type of environment... I'm sure you could find a company local in Kansas City who could do something pretty unique...
Yea, the multiple formats do help... and its nice to play off the final colors to build a strong brand... lets say you go with a deep blue/warm tones then you could do something nice/unique with the sign... Play off these colors with the decor inside the restaurant - maybe deep blue apparel with a one color warm tone logo for the embroidery... full color logo on the menu's, etc... just mixing it up playing off the final colors...
