I understand your concern about the colour variations you might need for some different usage on your photo or publications. Well, I would say that would be our standard of services to give you the colour variations of the logo, so you could use it on white (bright colour) background or dark background, or perhaps some particular colours as you mentioned.
Even though the "Last One" wording is hand-written of my own, and not an editable font, I can assure you, I can prepare the Photoshop smart object of the wording, so you could change the colour on your own to match the background (photo) colour accordingly.

Wonderful, also will I have all colors capabilities to change on each individual photo. Like for instance that photo with st. Paul where I'm on the roof top, would I be able to say have the font in white, with the city line in red. I'm all about personality and like to give each photo it's own touch as I do with my edits as well.
No problem. I believe these two elements would be great on its own or unified in one layout. So, yes. Both of them could be placed separately according to the layout and composition.
Your more than welcome, will these two logos be possible to split up. For instance say I'm typing a letterhead and would like the watermark of the city in the background, and the LastOne would be at the top of the page.
