Maybe try moving Happy to the top of the logo. Keeping enchilada at the bottom and moving the top pictures more centered location

Remove the 3 enchiladas. Use dog, bird, and cactus like #11 . Make “Happy” smaller and use safety orange color for “Happy” and “Enchilada” outline font in black and make black background the color of the sun.

What if you used the top half for the truck, dog, cactus and quail then under "Happy" would be straight and "enchilada" would be curved like a smile?

Can you do the wording in a blaze orange color, Remove the enchiladas (it became very busy), make the top of it look like #3, insert the cartoon version of the vehicle. Also can you try to keep it all inside a circle?
