I went ahead and used the characters in Frog Hollow and created the extra letters as near as I could to the style.
Adjustments can be made.
I also didn't have the font used on 'tavern' so used the nearest, shown here on "eatery 8 market"

Here are a couple of different fonts.
This one is nearer to the strokes in the illustration.

Do you know the font on Frog Hollow Tavern? Would you like to use that? I am still searching for it.
If it is hand-drawn I can use 'Frog and create ''& the Hen".

I'll start here but have a couple of questions.
I used the frog from your sister restaurant that you posted. I followed that style.

You asked for a French style bistro and added colors, I can do that as well.

Also was the script you have hand-made? I can also recreate that as well. Couldn't find a font exactly as that one.

I'll add some other designs for you once I know a specific direction to go.
