Frank, only the "Mattoni" motif with the flourished "M" is custom lettering. Otherwise the fonts are all commercially available and fairly widespread. The font used in #28, #29, #30 and #32 is widely available. I have merely tinkered with it a bit, joining the "tto" and adjusting the kerning (letter spacing) manually. However I'd probably avoid using that particular font for anything other than the logotype.
For additional text on letterheads and business cards I'd use a light weight of an early modernist sans serif font (I can give you advice on which fonts will look good with a chosen logo).
