flavors or smells are often indicated in art by wafting swirls, so that is what the c in cyrano is part of/intending to depict. The fade out at the outermost edge is to indicate how they soften as they extend farther.(or maybe since this is a clinic for people having difficulty with smelling and tasting, the gradiation from one side to the other could also mean going from no smell/taste (or little) to normal.
