The logo is a pastrami sandwich - and also one colour which makes it easy to apply to signage and uniforms etc.

Husk, I think #3 is the most unique logo at the moment. Can we see that in cadmium red, red/orange instead of fuscia? Actually, what if it was black, with a fine red-orange trim? Any other ideas to make it pop? I like the simplicity of it, one color, but would like to see it with a drop shadow or outline or something. I could see this as a label, a sticker label that seals the sandwich paper wrap.

I'm curious, with logos like #57 and #60, is it easy to take off "layers". i.e. Is it easy to take the logo down to one color for small items and cheap t-shirts? We like extra dimension (to a degree) but we want versatility.

Yes, very easy. Most designers will supply artwork using solid colours, as well as versions with gradients for different applications such as the ones you mentioned. In effect you would get 2 or 3 versions of the logo when you get the final files - a gradient version, a solid version and maybe a version in just black and white.

This one has the t bar moved in at both ends slightly, the f also lifted, and the bottom swoosh extended a little as well.

Nice changes. #98 looks a little too much like a breakfast place (with the rising sun). I think that is why we prefer #97 which is more of a setting sun. A full sun could be good. ON #78 I think a smaller Callifornia moved to the right (to line up with the length of the t cross) would allow room for a sun in the top left area.
