I really like where you're going with #7. I think my preference would be to see more detail in the tree itself. Your font selection is very strong and serves the "brand" well. Can you also try moving down the word "brewing" and centering it in its existing space? I like the use of the ribbon/banner in #10. Would be very interested in seeing how that same approach plays on #7. Nice work!
I zoomed in to the tree in a larger scale. Now the logo is larger. The design of the tree is designed as a drawing in ink. The ink drawing of the tree is the connection between tradition and modernity. I added a small badge "BOB" surrounded by two ears of barley in the logo # Can I still work on the design of the tree or other details, if you want.
Number 10 is got a lot of promise too. Could you keep the same design for #10 with the colors of #16? The size of the tree in #16 is great too. I really like the bottomortion of #10, especially the "BOB" mark. Nice work!

Nice improvement on #36. A little worried that background behind "Brewing" might be competing or clashing with rays of sunshine behind tree. Still trying to reconcile in my mind how the woodblock/ink stamp treatment of the tree works when used in larger formats. I still wish there were a little more detail in the tree and that it weren't so washed out. It's creative and a great look, but I'm really wishing it were more solid.
I try to add other details to the design. I think this graphic is understandable to every scale of measurement. I will do further studies to improve the logo.
I like what you've done with #36. However, I would still like to see what the logo would look like with the bottom section of #18 and without the wavy lines (i.e. solid color background like that of above the ribbon). The word "Brewing Company" in the selected font, may be hard to read. Could the font be changed somehow to be a little easier to read?
Also, I wonder if a hop vine instead of the oak branch would look good in this area.
