But I'm afraid using a character / mascot for your logo will makes your logo looks bit playful / fun, and bit loud while according to the Stylistic Sliders you wanted your logo looks subtle, and serious. Maybe youre right. Try to use others types of characters and try to be more modern

The image of te coffee and panini colud be less obvious and try to experiment with once moré color
