Here are some of my proposals. Instead of creating a separate icon / typography combination, I've created an all encompassing logo / wordmark. One that can be used for additional elements just as watermarks.
The logos are 100% vector so will scale well to any size, and works well in full colour, B&W and on coloured backgrounds if needed,
It would be my pleasure to work up any variations so please do say. I look forward to your comments or thoughts.
Hi Angus Really like Entry 5, entry 2 would like to see in Capitals and entry4 is good but doesn't really stand out to relating to an Australian Souvenir Business.

Here are a couple of variations of #2: #12 and #13 Both using capitals and with #13 I tried a grey text to make the icon replacing the "O" stand out more. I've also angled the line and star slightly more upwards as well (just to compare).
Here are some of my entries using the flag colours ...
The values are exactly the same, so identical colours. And I've also changed the star in some of the designs to match the flag as well i.e. a 7 sided star
